Quick and easy Chicken fired rice.
Created using leftover cooked chicken, chopped button mushrooms, rice, tinned sweetcorn and cherry tomatoes. Ideal when you are in a rush. Spice it up with herbs, or spices for added flavor.
Ingredients
- 1 chopped onion
- A handful of chopped button mushrooms
- 2 packs microwave rice (or cook your own rice)
- Leftover cooked chicken (chopped up)
- Tinned sweetcorn (drained)
- Cherry tomatoes (chopped)
Preparation method
Soften the onion and mushrooms in a little butter or oil.
Chop the chicken pieces up and add to the frying pan.
Cook the 2 packs of rice in the microwave for 2 minutes (I usually use one pack of egg fried rice and one pack of vegetable rice.)
Add rice to the pan, along with the tomatoes and sweetcorn and cook for 5 minutes.
Serve up and enjoy!
